Olive Oil Glossary
Cold-pressed oil
Cold-pressed oil is an oil that is extracted from oil plants, without any heat supply, purely under pressure and the friction of the oil mills from oil seed crops or oil fruits. This method preserves all the ingredients and vitamins. These give the oil its true flavour and smell, which is why usually, cold-pressed oils are of a higher quality. After it has been pressed, the cold-pressed oil is then filtered.
