Olive Oil Glossary
Virgin oil
Virgin oil is cold-pressed oil that has not been treated. This means that the oil has been pressed, without any heat, solely by means of pressure and friction in an oil mill. Not treated means that neither the raw material (oil seed or fruit) has been treated through a roasting process nor the extracted oil through refining or damping. This production method retains all the contents and vitamins that give virgin oil its typical smell and taste.
